About one third of the grapes are harvested for our Brut Reserve at the beginning of September. The remaining Pinot Blanc can still ripen through a thinned out leaf wall before it is sent to the press house for a gentle whole grape pressing. Just under half of the quantity matures for over 12 months in Manhartsberg oak barrels, the other half remains in steel tanks until the cuvéeing
